With a body lift on your 2000 Ford Ranger, you will still be able to install a trailer hitch like # 70181. It may look a little different than you might expect since the body will be higher than stock (there will be a gap between the receiver and truck) but you can still install one.
I have incldued a link to the isntallation instructions and a link to a video showing a typical installation for you.
If you plan on doing some towing, I recommend the etrailer Ball Mount Kit, # 989900. It comes with 2 ball mounts, 2 balls, a hitch pin with clip, and a carrying bag. For trailer wiring, use Tow Ready Custom Fit Vehicle Wiring, # 118344. I have included a link to the installation details for the wiring as well.
If you have added larger wheels/tires and the truck is also taller because of them, you may need a ball mount with more of a drop. I have included a link to an FAQ article that explains how to measure for the correct ball mount to tow the trailer level.
