On the back of the Pollak 7-Pole, Round Pin Trailer Wiring Socket - Vehicle End, part # PK11720, it is marked alongside the pin with the color of the wire that connects to that pin location.
I am also including a photo that will show a 7-Way round pin connector for the vehicle end with the colors and functions listed for each pin.
