have a 2011 new trek fuel ex7 with wide front Fox racing shox. Will the bar that secures to the tire hit the front fork or is there enough clearance?

I looked up your 2011 Trek Fuel EX7 bike on the internet to get an idea of where the front Fox racing shox are located. That is a very nice looking bike. On the Thule Insta-Gater Truck Bed Single Bike Rack, part # TH501, the only way you might be able to tell if the ratchet arm assembly will clear your shox on the front fork will be to measure from the center of your front tire out to the farthest edge of the shox.
I went out in the warehouse and measured the distance from the center of where the tire will sit in the frame of the bike rack to the closest part of the ratchet arm assembly and it measures 3 inches. If the measurement that you have taken on your bike is less than 3 inches, the ratchet arm assembly will clear your shox on the front fork of your bike.
If the front wheel on your bike can be easily removed I also have the Yakima BeddyJo 2 Bike Truck Bed Mounted Rack, part # Y0116, and the Yakima Locking BlockHead Single Bike Truck Bed Mounted Rack, part # Y01118.
I am including video links of reviews on the Thule and Yakima bike racks and links to the installation instructions on the Yakima bike rack.
